INGREDIENTS
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
3/4 c. packed brown sugar
3 Tbsp. softened butter
2 eggs
1 - 8 1/2 oz. can crushed pineapple
3/4 cup chopped nuts
TOPPING:
2 Tbsp. sugar
1/2 tsp. cinnamon
METHOD
Cream brown sugar, butter and eggs until fluffy.
Sift flour and blend with dry ingredients.
Add 1/2 the flour mixture into creamed mixture.
Add pineapple and juice, and blend.
Add the rest of the dry ingredients.
Blend in nuts.
Pour into a greased 9 x 5 loaf pan.
Mix sugar and cinnamon for topping and sprinkle over the
top of batter.
Bake at 350 degrees for 45-50 minutes or until toothpick inserted
in center comes out cleanly.
Cool before slicing.
